Training for Guatemalan Butchers Helps Importer Expand Retail Offerings

Supporting an importer of U.S. pork and beef in Central America seeking to expand its business into the retail sector, USMEF hosted a training session for the company’s butchers. The program focused on developing portion-control cuts for retail merchandising.

Funded by the National Pork Board and the Beef Checkoff Program, the activity with Grupo Buena in Guatemala focused on U.S. pork loin and U.S. beef short loin and bone-in ribeye.

USMEF consultant Saul Bueso led the training session, which provided the butchers information on U.S. pork and beef primals.

Butchers were trained on turning U.S. pork and beef primals into portion-control cuts for retailers
